Recipe Of The Week - Fall Suprise Casserole

Ingredients
- 1 cup Uncooked Rice
- 1 Yellow Squash - Diced
- 1 Zucchini Squash - Diced
- 1 Butternut or Acorn Squash - Diced
- 1 Onion - Diced
- 1 tsp. Salt
- 1/2 tsp. Black Pepper
- 1 15 oz can Stewed Tomatoes
- 1/2 cup Brown Sugar
- 1/2 cup Butter - Melted
- 1 sleeve Club Crackers
Directions
Mix crackers and melted butter, set aside. Layer remaining ingredients in order given. Top with crackers and bake uncovered at 325° for 45 minutes. This is always a hit!!
