Recipe Of The Week - Fall Suprise Casserole

Ingredients

  • 1 cup Uncooked Rice
  • 1 Yellow Squash - Diced
  • 1 Zucchini Squash - Diced
  • 1 Butternut or Acorn Squash - Diced
  • 1 Onion - Diced
  • 1 tsp. Salt
  • 1/2 tsp. Black Pepper
  • 1 15 oz can Stewed Tomatoes
  • 1/2 cup Brown Sugar
  • 1/2 cup Butter - Melted
  • 1 sleeve Club Crackers

Directions

Mix crackers and melted butter, set aside. Layer remaining ingredients in order given. Top with crackers and bake uncovered at 325° for 45 minutes. This is always a hit!!
