Recipe Of The Week: Autumn Surprise Cake

Autumn Surprise Cake

4 cups - raw Apples
2 cups - Sugar
3 cups - Flour
1 tsp. - Soda
1 tsp. - Salt
1 cup - Oil
2 beaten Eggs
2 tsp. - Vanilla
1 cup - Coconut
1 cup - Nuts

Glaze:
2 cups - Powdered Sugar
1 tsp. - Vanilla
5 Tbl. - Boiling Water

Cover apples with 2 cups sugar and let set at least 10 min., stirring occasionally. Mix flour, soda, salt, and oil. Mixture will be crumbly. Add eggs and 2 tsp. vanilla. Fold in apples, coconut and nuts. Put in greased, 9x13 pan and bake at 350 degrees for 45 min. The batter will be crumbly. When cake is just out of the oven, pour glaze made w/ remaining ingredients over top.
