Recipe Of The Week - Carrot Cake Cake

Carrot Cake Cake

2 Cups Sugar
2 Cups Flour
2 tsp Cinnamon
2 tsp Baking Soda
1 tsp Salt 
4 Eggs
1 1/4 Cup Vegetable Oil
3 Cups Coarsly Grated Carrots

Frosting:

1 Stick Oleo
8 oz Cream Cheese
2 tsp Vanilla
1 Cup Chopped Nuts
3 1/2 Cup Powdered Sugar

Cream sugar, oil and eggs.  Mix in remaining ingredents.  Put in 9"x13" pan.  Bake 350˚ for 30 Minutes or until toothpick comes out clean.

For Frosting:
Beat cream cheese and oleo well.  Add powdered sugar and vanilla.  Spread on cooled cake and sprinkle with nuts.  

This is a very moist, delicious cake!
