Cheesy Enchiladas
Cheese Suace:
1 Stick Oleo - Melted
4 Tbs. Flour
3 Cups Milk
1 - 8 oz Jar Cheeze Whiz
1 - 8 oz Sour Cream
In sauce pan combine oleo, flour and milk. Cook on low heat until thickened. Add Cheeze Whiz and sour cream, set aside.
Meat Mixture:
2 lbs Ground Beef
1 Medium Onion
2 Tbs. Flour
1 - 15 oz Can Rotel Tomaotes
1 tsp. Salt
1 tsp. Pepper
1/2 tsp. Cumin
10 - 12 Corn or Flour Tortillas
2 Cups Grated Cheese
Brown ground beef and onion together. Add flour, tomatoes and seasonings. Divide meat mixture among tortillas. Top eaqch with grated cheese. Roll up and place in greased casserole dish. Pour Cheese sauce on top. Bake at 350˚ for 20-30 minutes til heated thru.
