Recipe Of The Week - Cappuccino Muffins

Cappuccino Muffins
Espresso Spread
4 oz Cream Cheese - Softened
3 Tbs Sugar
1/2 tsp Vanilla
1/4 Cup Miniature Chocolate Chips
Combine ingredents, cover and refrigerate until serving time.
Muffins
2 Cups Flour
1 Cup Sugar
2 1/2 tsp Baking Powder
1 tsp Cinnamon
1/2 tsp Salt
1 Cup Milk
2 Tbs Instant Coffee Granuals
1/2 Cup Butter - Melted
1 Egg
1 tsp Vanilla
3/4 Cup Minature Chocolate Chips
In large bowl, combine first five muffin ingredents. In a small bowl, stir milk and coffee until coffee is dissolved. Add butter, egg and vanilla. Mix well. Stir into dry ingredents, just until moistened. Fold chocolate chips in. Fill greased or paper lined muffin cups 2/3 full. Bake at 350˚ for 17-20 minutes. Serve with espresso spread.
