Recipe Of The Week - Autumn Surprise Cake

Ingredients:

  • 4 cups Raw Apples, peeled and chopped
  • 2 cups Sugar
  • 3 cups Flour
  • 1 tsp Baking Soda
  • 1 tsp Salt 
  • 1 cup Vegetable Oil
  • 2 Eggs, beaten
  • 2 tsp Vanilla
  • 1 cup Coconut
  • 1 cup Nuts 

Glaze:

  • 2 cups Powdered Sugar
  • Hot Water
  • 1 tsp Vanilla

Directions:

  1. Cover apples with 2 cups of sugar and let them set for 10 minutes - stirring occasionally.
  2. Mix flour, baking soda, salt and oil. Mixture will be crumbly.
  3. Add eggs and 2 tsp vanilla.
  4. Fold in apple mixture, coconut and nuts. Batter will still be crumbly!
  5. Put in 9"x13" pan.
  6. Bake at 350˚ for 45 minutes.

For Glaze:

  1. Mix powdered sugar and enough hot water to make glaze.
  2. Add vanilla.
  3. Pour over warm cake.
