Recipe Of The Week - Autumn Surprise Cake

Ingredients:
- 4 cups Raw Apples, peeled and chopped
- 2 cups Sugar
- 3 cups Flour
- 1 tsp Baking Soda
- 1 tsp Salt
- 1 cup Vegetable Oil
- 2 Eggs, beaten
- 2 tsp Vanilla
- 1 cup Coconut
- 1 cup Nuts
Glaze:
- 2 cups Powdered Sugar
- Hot Water
- 1 tsp Vanilla
Directions:
- Cover apples with 2 cups of sugar and let them set for 10 minutes - stirring occasionally.
- Mix flour, baking soda, salt and oil. Mixture will be crumbly.
- Add eggs and 2 tsp vanilla.
- Fold in apple mixture, coconut and nuts. Batter will still be crumbly!
- Put in 9"x13" pan.
- Bake at 350˚ for 45 minutes.
For Glaze:
- Mix powdered sugar and enough hot water to make glaze.
- Add vanilla.
- Pour over warm cake.
