Recipe of the Week - Stuffed Green Peppers Deluxe

Ingredients:

  • 1 1/2 lb. Ground Beef-Browned & Drained
  • 1/3 Cup Chopped Onion
  • 1-10.75 oz. can Rotel Tomato 
  • 1 1/4 Cup Cooked Rice (Minute Rice Works Great!)
  • 2 Tsp. Salt
  • 1 Tsp. Pepper
  • 2 Tbsp. Sugar
  • 2 Tbsp. Flour
  • 1 Sleeve Ritz Crackers - Crushed
  • 1 Stick Margarine
  • 1 Cup Grated Cheese
  • 4 Bell Peppers

Directions:

Combine all ingredients but the last three in a skillet and simmer until heated through. Meanwhile cut peppers in half lengthwise, clean out and wash. Drop into boiling water and boil for 1 minute. Place in bottom of 9"x13" pan and place filling in and around them. Combine crackers, margarine and cheese. Spread on top of meat mixture. Bake at 375° for 30 minutes. These are really good and if your kids do not like peppers, they will still like the filling!
