Recipe Of The Week - Cappuccino Muffins

Cappuccino Muffins With Espresso Spread Muffins 


Ingredients:

  • 2 Cups Flour
  • 3/4 Cup Sugar
  • 2 1/2 tsp Baking Powder
  • 1 tsp Cinnamon
  • 1/2 tsp Salt
  • 1 Cup Milk
  • 2 Tbsp Instant Coffee Granules
  • 1/2 Cup Margarine - melted
  • 1 Egg
  • 1 tsp Vanilla
  • 3/4 Cup Miniature Chocolate Chips



Directions:

In a large bowl, combine first five ingredients.
in a small bowl stir milk and coffee granules until coffee is dissolved.
Add margarine, egg and vanilla, mix well.
Stir into dry ingredients just until moistened.
Fold in chocolate chips.
Fill greased or paper lined muffin tins 2/3 full.
Bake at 375˚ for 17-20 min.

Serve with: Espresso 

Spread:

  • 4 Oz. Cream Cheese - softened
  • 4 Tbsp. 1/2 Tsp Vanilla
  • 1/4 Cup Miniature Chocolate Chips



Combine All Ingredients Well. Cover And Refrigerate Until Serving Time.
