Recipe of the Week - Autumn Surprise Cake

Ingredients:

  • 4 Cups Peeled and Chopped Apples
  • 2 Cups Sugar
  • 3 Cups Flour
  • 1 tsp. Cinnamon
  • 1 tsp. Soda
  • 1 tsp. Salt
  • 1 Cup Oil
  • 2 Eggs - Beaten
  • 2 tsp. Vanilla
  • 1 Cup Coconut
  • 1 Cup Chopped Nuts
  • 2 Cups Powdered Sugar
  • 1 tsp. Vanilla 
  • 1/2 Cup Boiling Water

Directions

Cover Apples with sugar and let set for 10 minutes, stirring occasionally. Mix Flour, Soda, Salt, Cinnamon and Oil. Mixture will be crumbly. Add Eggs and 2 tsp. Vanilla. Fold in Apples, Coconut and Nuts. Put in 9"x13" pan and bake for 45 minutes. Mix remaining ingredients and pour over cake after taking out of oven.
