Recipe of the Week - Mexican Cornbread

Ingredients:

  • 1 Cup Cornmeal
  • 1/2 Cup Floor
  • 2 tsp. Baking Powder
  • 1 tsp. Baking Soda
  • 1/2 tsp. Salt
  • 1/2 Cup Sugar
  • 1 Cup Corn (Canned or Frozen)
  • 8 oz. Sour Cream
  • 1/2 Cup Milk
  • 1/2 Cup Oil 
  • 2 Eggs
  • 1/2 Cup Salsa
  • 1/3 Cup Chopped Onions
  • 1 Cup Grated Cheese (Optional)

Directions

Combine dry ingredients. Add remaining Ingredients in order given. Mix well. Put in 9"X13" Pan. Bake at 350° for 30 minutes.
