Recipe of the Week - Christmas Eve Cheeseburger Soup

Ingredients

  • 1 1/2 lbs. Hamburger Meat - Cooked
  • 2 tsp. Salt
  • 1 tsp. Pepper
  • 4 Cups Diced Potatoes
  • 1 Cup Sliced Carrots
  • 1 Cup Chopped Celery
  • 1/2 Cup Chopped Onion
  • 4 Cups Chicken Broth
  • 1 Can Cream of Chicken Soup
  • 1 lb. Velveeta Cheese
  • 2 Soup Cans Milk
  • 8 oz. Sour Cream

Directions

Combine broth, carrots, onion, celery and potatoes. Simmer 15 minutes. Add cooked hamburger, soup, cheese and milk. Heat until cheese is melted and soup is hot. Add sour cream just before serving. Do not boil. May add cooked bacon if desired. Serve with hot rolls, corn bread or biscuits. Yum!
