Recipe of the Week - Zucchini Bread

Ingredients

  • 2 cups grated Zucchini
  • 2 cups Sugar
  • 3 Eggs
  • 1 cup Oil
  • 2 tsp. Vanilla
  • 3 cups Flour
  • 1 tsp. Soda
  • 1 tsp. Baking Powder
  • 1 tsp. Salt
  • 1 tsp. Cinnamon
  • 1/2 cup Chopped Nuts

Topping

  • 1 cup Flour
  • 1 cup Brown Sugar
  • 1/4 cup Butter

Directions

Beat eggs, sugar and oil. Add grated zucchini and vanilla. Add remaining ingredients and mix well. Put in 2 loaf pans that have been sprayed with PAM. Crumble topping ingredients together and sprinkle on top. Bake @ 325º F for one hour.
