Recipe Of The Week - Frogs Eye Salad

Ingredients

  • 1 1/2 Cups Sugar 
  • 3 Tbs Flour 
  • 1/2 Tsp Salt 
  • 1 1/3 Cup Pineapple Juice 
  • 2 Eggs, Beaten 
  • 2 Tsp Lemon Juice 
  • 1 1/4 Cup Acini-De-Pepe 
  • 16 Oz Cool Whip 
  • 20 Oz Tidbit Pineapple, Drained 
  • 15 Oz Mandarin Oranges, Drained

Directions

Boil acini-de-pepe for 11 minutes. Drain and cool. Mix sugar, flour, salt, pineapple juice, eggs, and lemon juice. Cook in microwave until it boils or thickens. Cool. Stir in acini-de-pepe, cool whip and fruit. Chill until serving time. This salad is well worth the time and effort!
