Recipe Of The Week - Frogs Eye Salad

Ingredients
- 1 1/2 Cups Sugar
- 3 Tbs Flour
- 1/2 Tsp Salt
- 1 1/3 Cup Pineapple Juice
- 2 Eggs, Beaten
- 2 Tsp Lemon Juice
- 1 1/4 Cup Acini-De-Pepe
- 16 Oz Cool Whip
- 20 Oz Tidbit Pineapple, Drained
- 15 Oz Mandarin Oranges, Drained
Directions
Boil acini-de-pepe for 11 minutes. Drain and cool. Mix sugar, flour, salt, pineapple juice, eggs, and lemon juice. Cook in microwave until it boils or thickens. Cool. Stir in acini-de-pepe, cool whip and fruit. Chill until serving time. This salad is well worth the time and effort!
