Recipe Of The Week - Chicken Con Queso

Ingredients

  • 3 chicken breasts-cooked and diced
  • 2 lbs. Velveeta cheese-cubed
  • 1 (15 oz.) can Ro-Tel tomatoes
  • 1 (10 oz.) can cream of chicken
  • 1 sm. can chopped green chilies
  • tortilla chips for dipping

Directions

Place Velveeta cubes, Ro-Tel tomatoes, green chilies and soup in microwave safe bowl.  Microwave on high for 2 minutes.  Stir.  Continue to heat, stirring every minute until smooth and creamy.  Fold in chicken pieces.  Serve with warm tortilla chips.  M-m-m-m!
