Recipe Of The Week - Oven Roasted Veggies & Chicken

Ingredients

  • 4 boneless skinless chicken breasts (cut in 1" pieces)
  • 1/3 cup olive oil
  • 1/3 cup Dale's Steak Seasoning
  • 1 medium onion (diced)
  • 1 red pepper
  • 1 zucchini sqaush
  • 1 yellow squash
  • 2 small sweet potatoes
  • 2 red potatoes
  • 1 1/2 cups baby carrots
  • 2 tsp. salt
  • 1 tsp. pepper
  • 1 tsp. dill weed


Directions

Cut vegetables up to desired size. Sweet potatoes and carrots will take longer, so cut them a bit smaller than the other vegetables. Put the first 3 inggredients in a 11"x15" that is lined with tin foil. Mix gently. Bake @ 350º F for 25 minutes. Stir, then add the remaining ingredients. Stir gently then return to oven for 45 minutes or until vegetables are tender.
