Recipe Of The Week - Easy Chicken Fajita Skillet

Ingredients

  • 1 lb. boneless skinless chicken (cut in bite size pieces)
  • 2 tsp.chili powder
  • 1 tsp. salt
  • 2 cups elbow macaroni uncooked
  • 1 cup red & green peppers (cut in bite size pieces)
  • 1 med. onion (chopped)
  • 8 oz. Velveeta Cheese (cut up)

Directions

Cook the chicken and seasonings in a large non-stick skillet on medium heat until the chicken is cooked thru, stirring occasionally.  Stir in 2 1/4 cups water, and bring to boil.  Stir in the macaroni, cover and reduce heat to medium-low.  Simmer for 5 minutes, then add the peppers and onions.  Cover and simmer an additional 5 minutes.  Add the Velveeta and cook until it's melted, stirring frequently.
